- 1 12 cups mangoes or 1 12 cups peaches, chopped peeled
- 1 medium sweet red pepper, seeded and chopped
- 2 tablespoons green onions, thinly sliced
- 1 fresh jalapeno, seeded and chopped
- 1 tablespoon olive oil
- 12 teaspoon lime peel, finely shredded
- 1 tablespoon fresh lime juice
- 1 tablespoon vinegar
- 14 teaspoon salt
- 14 teaspoon ground black pepper
Directions

1In a medium bowl combine the mango, sweet red pepper, green onion, and jalapeno pepper.

2In a small bowl, whisk together the oil, lime peel, lime juice, vinegar, salt, and black pepper.

3Drizzle lime mixture over mango mixture; stir gently to coat.
