  • 1 12 cups mangoes or 1 12 cups peaches, chopped peeled
  • 1 medium sweet red pepper, seeded and chopped
  • 2 tablespoons green onions, thinly sliced
  • 1 fresh jalapeno, seeded and chopped
  • 1 tablespoon olive oil
  • 12 teaspoon lime peel, finely shredded
  • 1 tablespoon fresh lime juice
  • 1 tablespoon vinegar
  • 14 teaspoon salt
  • 14 teaspoon ground black pepper

Directions

    In a medium bowl combine the mango, sweet red pepper, green onion, and jalapeno pepper.

    In a small bowl, whisk together the oil, lime peel, lime juice, vinegar, salt, and black pepper.

    Drizzle lime mixture over mango mixture; stir gently to coat.
