- 2 Ripe Mangoes
- 1 ounce, fluid White Vinegar
- 1 ounce, fluid Lime, Juice And Zest
- 3 ounces, fluid Olive Oil
- 1 Tablespoon Sugar
- Salt And Pepper
Directions

1Peel mangoes and remove seed. Place in a blender or food processor. Once blended, pass through a sieve. Place in a bowl and reserve.

2Add vinegar, lime juice and zest, olive oil, and sugar. Add salt and pepper.

3Adjust seasoning and place in the fridge until needed.
