Manhattan Clam Chowder

Ingredients

  • 4 strips bacon
  • 1 c. celery, chopped
  • 2 c. potatoes, diced
  • 1 c. carrots, chopped
  • 1 (28 oz.) can crushed tomatoes
  • 3 (6 1/2 oz.) cans chopped clams
  • salt and pepper to taste
  • 1/4 tsp. thyme

Directions

    Cut bacon in small pieces; saute in large pot; add celery and onions.

    Saute until tender.

    Add potatoes, carrots and tomatoes. Drain clams.

    Add enough water to broth to make 4 cups liquid. Add this to vegetables with salt, pepper and thyme.

    Simmer covered 35 minutes.

    Add clams and simmer another 30 minutes.
