  • 8 c. diced potatoes, cooked and cooled
  • 4 jars pimento, diced
  • 4 Tbsp. butter
  • 1 can cream of celery soup *
  • 1/2 c. buttered bread crumbs
  • 2 small onions, diced
  • 1/2 c. diced green pepper
  • 1/2 c. milk
  • 1 c. grated sharp Cheddar cheese

Directions

    Combine the cooked potatoes, onions, green peppers and pimento in casserole dish.

    Melt the butter and mix with the soup and milk.

    Pour over the potatoes.

    Finally, top the potatoes with the bread crumbs.

    Bake at 350° for 30 minutes.
