  • 1 large jar Ragu sauce (meatless)
  • 1 medium onion, chopped
  • 1 bay leaf (optional)
  • 1 tsp. Italian seasoning
  • 1 tsp. garlic powder
  • 1/2 tsp. basil
  • 1 pkg. (6 oz.) pepperoni
  • 1 box manicotti noodles
  • 16 oz. Ricotta cheese
  • 3 c. Mozzarella cheese
  • 8 oz. Parmesan cheese
  • 1 egg, beaten

Directions

    Combine sauce, onion, and spices together and cook.

    Cook pepperoni in skillet and drain.

    Add to sauce.

    Simmer for one hour.

    Cook noodles in boiling water for 12 minutes, drain.

    Mix cheeses and add egg.

    Stuff noodles with cheese mixture.

    Put a little sauce in bottom of 9x13-inch casserole dish or baking pan. Place stuffed noodles in pan and pour remaining sauce over top. Sprinkle top with additional Mozzarella cheese if desired.

    Bake for one hour at 350°.
