- 1 large jar Ragu sauce (meatless)
- 1 medium onion, chopped
- 1 bay leaf (optional)
- 1 tsp. Italian seasoning
- 1 tsp. garlic powder
- 1/2 tsp. basil
- 1 pkg. (6 oz.) pepperoni
- 1 box manicotti noodles
- 16 oz. Ricotta cheese
- 3 c. Mozzarella cheese
- 8 oz. Parmesan cheese
- 1 egg, beaten
Directions

1Combine sauce, onion, and spices together and cook.

2Cook pepperoni in skillet and drain.

3Add to sauce.

4Simmer for one hour.

5Cook noodles in boiling water for 12 minutes, drain.

6Mix cheeses and add egg.

7Stuff noodles with cheese mixture.

8Put a little sauce in bottom of 9x13-inch casserole dish or baking pan. Place stuffed noodles in pan and pour remaining sauce over top. Sprinkle top with additional Mozzarella cheese if desired.

9Bake for one hour at 350°.
