- 1 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 egg, beaten
- 3/4 c. maple syrup
- 2 1/2 c. bran flakes, crushed
- 1 (8 oz.) sour cream
Directions

1Combine the first 3 ingredients in a large bowl; make a well in center.

2Combine egg and maple syrup in small bowl, stirring well; add bran flakes and let stand 5 minutes.

3Add liquid mixture to dry ingredients, stirring just until moistened.

4Spoon into greased muffin pans, filling 2/3 full.

5Bake at 400° for 18 to 20 minutes.

6Remove from pans immediately.

7Yield: 15 muffins.
