Maple-Pumpkin Pancakes

- 3/4 c. quick oats (uncooked)
- 1 1/2 c. skim milk
- 2 eggs, lightly beaten
- 1/2 c. cooked, mashed pumpkin
- 3 Tbsp. maple syrup
- 1 Tbsp. vegetable oil
- 1 1/4 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
Directions

1Combine oats and milk; let stand 5 minutes. Add eggs, pumpkin, maple syrup and oil; stir well. Combine flour, baking powder, salt and cinnamon in a large bowl. Make a well in center of mixture. Add oat mixture to dry ingredients, lightly stirring. For each pancake, pour 1/4 cup batter onto a hot skillet, coated with cooking spray.

2Turn pancakes when tops are covered with bubbles and edges look cooked. Yields 16 servings.
