  • 2 eggs
  • 3 Tbsp. sugar
  • 1/2 tsp. ground ginger
  • 3/4 tsp. cinnamon
  • pinch of salt
  • 3/4 c. maple syrup
  • 1 c. undiluted evaporated milk
  • 2 c. canned pumpkin
  • pastry for 9-inch bottom crust

Directions

    Beat eggs well, then beat in sugar, spices and salt.

    Add maple syrup, evaporated milk and pumpkin, beating with rotary beater.

    Pour into pastry-lined pan and bake in 450° oven for 10 minutes.

    Reduce heat to 350° and bake 40 minutes longer or until a knife blade comes out cleanly when inserted near center.

    Serve cold or slightly warm.
