Maple Syrup Pork Stew

  • 1 tbsp olive oil
  • 2 lbs pork shoulder, cut into 1-inch pieces
  • 1 medium onion, finely chopped
  • 2 cloves garlic, crushed
  • 1/4 cup maple syrup
  • 1/4 cup orange juice
  • 1/2 cup chicken stock
  • 9 oz baby carrots
  • 2 stalks celery, cut into thick matchsticks
  • 2 tbsp currants
  • 3 oz baby spinach leaves

    Heat half the oil in a 6-quart pressure cooker. Cook pork, in batches, until browned. Remove from cooker.

    Heat remaining oil in cooker. Cook onion and garlic, stirring, until onion has softened. Return pork to cooker with maple syrup, orange juice and stock; secure lid. Bring cooker to high pressure. Reduce heat to stabilize pressure; cook for 20 mins.

    Release pressure using the quick release method, remove lid. Add carrots, celery and currants; secure lid. Bring cooker to high pressure. Reduce heat to stabilize pressure; cook for 5 mins.

    Release pressure using the quick release method; remove lid. Stir in spinach; season to taste.
