- 1 large chicken, quartered
- salt and pepper
- 3 Tbsp. butter
- 2 1/2 Tbsp. flour
- 3 Tbsp. butter
- 1 c. chicken stock
- 1/2 lb. mushrooms, sliced
- 1/2 lb. tomatoes, chopped
- 1/2 c. sliced green olives
- 1/2 c. white wine
- cooked noodles
Directions

1Dredge the chicken in the flour seasoned with salt and pepper. Saute the chicken in three tablespoons butter until tender. Remove from frypan and keep warm.

2Using the same pan, make a sauce with the flour, butter and chicken stock.

3Stir until thick and smooth.

4Add mushrooms, tomatoes, olives and white wine. Simmer for about ten minutes.

5Pour the sauce over the chicken and serve with hot noodles.

6Serves four.
