  • 1 large chicken, quartered
  • salt and pepper
  • 3 Tbsp. butter
  • 2 1/2 Tbsp. flour
  • 3 Tbsp. butter
  • 1 c. chicken stock
  • 1/2 lb. mushrooms, sliced
  • 1/2 lb. tomatoes, chopped
  • 1/2 c. sliced green olives
  • 1/2 c. white wine
  • cooked noodles

Directions

    Dredge the chicken in the flour seasoned with salt and pepper. Saute the chicken in three tablespoons butter until tender. Remove from frypan and keep warm.

    Using the same pan, make a sauce with the flour, butter and chicken stock.

    Stir until thick and smooth.

    Add mushrooms, tomatoes, olives and white wine. Simmer for about ten minutes.

    Pour the sauce over the chicken and serve with hot noodles.

    Serves four.
