- 2 tsp. each: olive oil and butter or margarine
- 1 clove garlic, minced
- 1/2 c. chopped onion
- 1/2 c. sliced mushrooms
- 1 1/2 c. canned ready cut tomatoes
- 1/4 c. chopped parsley
- 1/2 tsp. dried basil
- salt and pepper to taste
- 3/4 c. grated Parmesan cheese
Directions

1In a large nonstick skillet, heat olive oil and butter.

2Saute garlic and onion until onion is clear, about 5 minutes.

3Add mushrooms and saute 2 minutes longer.

4Stir in tomatoes, parsley and seasonings.

5Cover and simmer gently for 15 minutes.

6Stir in half of the Parmesan cheese.

7Sprinkle remaining cheese on top as serving.
