  • 3 cans (28 oz. each) peeled plum tomatoes with basil
  • 8 Tbsp. extra virgin olive oil
  • 6 large cloves garlic, finely chopped
  • 3 Tbsp. fresh basil leaves, finely chopped
  • 3 Tbsp. fresh parsley, finely chopped
  • 3 Tbsp. dried oregano
  • 1 Tbsp. minced garlic
  • 4 oz. red wine

    In a large porcelain-lined pot, over high heat:

    Add olive oil and heat to medium temperature.

    Add chopped garlic and cook garlic until very light, golden brown in color, stirring continuously.

    Add fresh basil and fresh parsley, stirring with garlic.

    Empty only the juice from cans of tomatoes into pot. Break tomatoes by hand into bite-sized pieces over pot and add to mixture, stirring frequently while adding tomatoes.

    (Tomatoes may be put through a food mill instead of broken by hand.)
