- 2 (14 oz.) cans artichoke bottoms (undrained)
- 3 Tbsp. lemon juice
- 1 tsp. sugar
- 1/4 tsp. dried, crushed oregano
- 1/4 tsp. dried tarragon
- dash of garlic powder
Directions

1Drain artichokes, reserving liquid; quarter artichokes.

2Set aside.

3Combine reserved liquid, lemon juice and next 4 ingredients; stir well.

4Add artichokes.

5Cover and chill 8 hours, stirring occasionally.

6To serve, drain artichokes and place on bed of lettuce leaves, if desired.

7Yields 40 appetizers or can use as a salad.
