Marinated Bean Salad

Ingredients

  • 1 can red kidney beans
  • 1 can garbanzo beans
  • 2 1/2 c. sliced celery
  • 1 bunch green onions, sliced
  • 1 small can sliced black olives
  • 1/2 c. lemon juice
  • 1 clove garlic, pressed
  • 1 can green beans or 1 c. fresh
  • 1 can black-eyed peas
  • 1 c. finely chopped parsley
  • 3 oz. jar stuffed green olives
  • 1/2 c. olive oil
  • 2 Tbsp. firmly packed brown sugar
  • salt and pepper to taste

Directions

    Rinse and drain beans and peas.

    Add celery, parsley, onions and green and black olives.

    In a small bowl, whisk together the rest of the ingredients.

    Pour over bean mixture.

    Cover and refrigerate overnight.
