Marinated Carrots

  • 2 lb. carrots, sliced
  • 1 large onion, chopped
  • 1 can tomato soup
  • 1/2 c. oil
  • 3/4 c. sugar
  • 1/2 c. vinegar
  • 1/2 tsp. salt
  • 1 tsp. paprika
  • 1 tsp. dry mustard

Directions

    Peel and slice carrots into circles about 1/8 inch thick. Boil in salt water until barely tender.

    Drain and combine with onion.

    Mix remaining ingredients in saucepan and bring to a boil. Pour over carrot mixture and refrigerate.

    Must marinate at least 24 hours before serving.

    Keeps for a week or longer.
