- 1 bunch carrots, scraped and sliced
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 1/4 c. olive oil
- 2 Tbsp. wine vinegar
- 1 tsp. oregano
- 1/2 tsp. pepper
Directions

1Cook carrots in boiling salted water until tender, about 15 minutes. Drain and pour into bowl.

2While carrots are cooking, blend remaining ingredients. Pour over warm carrots.

3Cover and marinate for 12 hours.

4Serve at room temperature.
