- 2 lb. carrots
- 1 large green pepper
- 1 large onion
- 1 can tomato soup
- 1/2 c. vegetable oil
- 1/2 c. vinegar
- 1/2 tsp. salt
- 3/4 c. sugar
Directions

1Slice carrots into 1/2-inch slices.

2Cook until tender crisp. Drain and cool.

3Chop peppers and onion, then add to cooled carrots.

4Mix together tomato soup, vegetable oil, vinegar, salt and sugar; pour over carrots and set for 48 hours.

5Will keep indefinitely in refrigerator.
