Marinated Carrots

Ingredients

  • 2 lb. carrots
  • 1/2 onion, sliced or diced
  • 1/2 green pepper, sliced or diced
  • 1/2 c. sugar
  • 1 can tomato soup
  • 1/2 c. oil
  • 1 tsp. Worcestershire sauce
  • 1 tsp. prepared mustard
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

    Slice carrots; cook about 10 minutes.

    Drain and cool.

    Add onion and green pepper.

    Heat tomato soup and add sugar to dissolve.

    Stir in oil, Worcestershire sauce, mustard and seasonings.

    Marinate for 3 to 5 days in refrigerator.

    Put in double boiler so it can be heated, or it can be served cold.
