Marinated Carrots

  • 2 lb. carrots
  • 1 large onion, sliced into thin rings
  • 1 large green pepper, cut into thin strips
  • 1 can tomato soup (undiluted)
  • 1 c. sugar
  • 1/2 c. salad oil
  • 3/4 c. vinegar
  • 1 tsp. salt
  • 1 tsp. pepper

    Wash, scrape carrots and cut into pieces.

    Cook in boiling water until just tender.

    Drain and cool.

    Combine carrots, onion and green pepper in large bowl.

    Combine tomato soup, sugar, oil, vinegar, salt and pepper in saucepan and bring to a boil.

    Stir to dissolve sugar.

    Pour hot mixture over vegetables in bowl.

    Cool, cover and refrigerate overnight.
