- 2 lb. carrots
- 1 large onion, sliced into thin rings
- 1 large green pepper, cut into thin strips
- 1 can tomato soup (undiluted)
- 1 c. sugar
- 1/2 c. salad oil
- 3/4 c. vinegar
- 1 tsp. salt
- 1 tsp. pepper
Directions

1Wash, scrape carrots and cut into pieces.

2Cook in boiling water until just tender.

3Drain and cool.

4Combine carrots, onion and green pepper in large bowl.

5Combine tomato soup, sugar, oil, vinegar, salt and pepper in saucepan and bring to a boil.

6Stir to dissolve sugar.

7Pour hot mixture over vegetables in bowl.

8Cool, cover and refrigerate overnight.
