Marinated Carrots

Ingredients

  • 5 c. carrots, sliced round
  • 1 large onion (white or purple), sliced round
  • 1 large bell pepper
  • 1 (10 oz.) can Campbell's tomato soup
  • 1 tsp. prepared mustard
  • 1 tsp. Worcestershire sauce
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 c. salad oil
  • 3/4 c. sugar
  • 3/4 c. vinegar

Directions

    Cook carrots 6 to 8 minutes, until just tender, not soft. Drain and cool quickly.

    Mix vegetables.

    Mix all other ingredients well, then pour over vegetables.

    Cover and marinate overnight or 10 hours before serving.

    This will keep 2 weeks in refrigerator.
