- 3 whole Cucumbers
- 1 cup Rice Vinegar
- 2 teaspoons Sugar
- 1/4 cups Soy Sauce
- 3 cloves Garlic, Minced
- 3 Tablespoons Red Pepper Flakes (or To Taste)
Directions

1I prefere the cucumbers de-skinned, but my husband likes them with the skin, so its your preference.

2Slice the cucmbers thinly and place in a bowl with all of the ingredients, making sure all cucumbers are drenched.

3Cover and place in the refrigerator for 30 minutes.

4Serve chilled as an appetizer, or just to eat as a snack.
