Marinated Chinese Cucumbers

  • 3 whole Cucumbers
  • 1 cup Rice Vinegar
  • 2 teaspoons Sugar
  • 1/4 cups Soy Sauce
  • 3 cloves Garlic, Minced
  • 3 Tablespoons Red Pepper Flakes (or To Taste)

Directions

    I prefere the cucumbers de-skinned, but my husband likes them with the skin, so its your preference.

    Slice the cucmbers thinly and place in a bowl with all of the ingredients, making sure all cucumbers are drenched.

    Cover and place in the refrigerator for 30 minutes.

    Serve chilled as an appetizer, or just to eat as a snack.
