Marinated Grill Swordfish

  • 3 Tbsp. olive oil
  • 4 garlic cloves
  • 1/3 c. basil
  • 2 tsp. parsley
  • 1 tsp. peppercorn, cracked
  • 4 ripe tomatoes
  • 4 red onions
  • 1 lemon and orange
  • 6 swordfish (1/2-inch thick)

Directions

    Mix olive oil, garlic, basil, parsley and peppercorn together. Combine marinade with lemons, orange and fish in shallow dish. Coat both sides.

    Cover with plastic wrap.

    Put into refrigerator for several hours.

    Turn 1 to 2 times.

    Remove 20 minutes prior to grilling.

    Preheat grill 20 minutes.

    Position grill rack 5 to 6-inches above charcoals.

    Set gas grill to medium heat.
