- 3 Tbsp. olive oil
- 4 garlic cloves
- 1/3 c. basil
- 2 tsp. parsley
- 1 tsp. peppercorn, cracked
- 4 ripe tomatoes
- 4 red onions
- 1 lemon and orange
- 6 swordfish (1/2-inch thick)
Directions

1Mix olive oil, garlic, basil, parsley and peppercorn together. Combine marinade with lemons, orange and fish in shallow dish. Coat both sides.

2Cover with plastic wrap.

3Put into refrigerator for several hours.

4Turn 1 to 2 times.

5Remove 20 minutes prior to grilling.

6Preheat grill 20 minutes.

7Position grill rack 5 to 6-inches above charcoals.

8Set gas grill to medium heat.
