  • 1 pound brown lentils
  • diced onion cup Finely-
  • 2 tablespoons olive oil
  • 2 teaspoons chopped fresh mint
  • 2 teaspoons fresh basil Chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon minced garlic
  • salt to taste
  • ground white pepper Freshly-, to taste

Directions

    Place the lentils in a pot with cold water to cover and cook until tender but not mushy.

    Drain lentils, and while still hot, toss thoroughly with onion, olive oil, herbs, spices and garlic.

    Season to taste with salt and white pepper.
