- 13 cup red wine vinegar
- 13 cup salad oil
- 1 red onion, thinly sliced
- 1 teaspoon salt
- 2 teaspoons dried parsley flakes
- 1 tablespoon brown sugar
- 1 teaspoon prepared mustard
- 3 cups fresh mushrooms, steamed 1 minute
Directions

1Simmer all ingredients except mushrooms for 5 minutes.

2Cool slightly.

3Steam mushrooms for 1 minute and drain.

4Add marinade to mushrooms and toss lightly.

5Store in refrigerator for at least 24 hours, or up to a week.

6Remove from refrigerator an hour before serving.
