- 1 tablespoon olive oil
- 14 cup diced smoked bacon
- 3 cups quartered button mushrooms
- 1 rosemary sprig
- 14 teaspoon salt
- 14 cup white balsamic vinegar
- 1 tablespoon agave syrup
Directions

1In a saucepan, heat oil over medium heat.

2Add bacon and cook, stirring often, until fat is slightly rendered.

3Add mushrooms, rosemary and salt and cook, stirring often until mushrooms are soft.

4Add vinegar and agave syrup and bring to a simmer.

5Boil until liquid is evaporated, about 8 minutes.

6Let cool to room temperature.

7Discard rosemary sprig.
