- 3 Tbsp. olive oil
- 1 Tbsp. tarragon vinegar
- dash of salt
- dash of freshly ground black pepper
- 1 tsp. chopped parsley
- 1/4 tsp. minced fresh or dried tarragon
- fresh endive leaves, washed
Directions

1If mushrooms are not clean, gently rinse and dry on paper towels.

3In a bowl, combine other ingredients, except endive, and toss well with mushrooms.
