Marinated Mushrooms

Ingredients

  • 1 lb. small fresh mushrooms
  • 1/4 c. olive oil
  • 3 Tbsp. lemon juice
  • 1 garlic clove, halved
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. oregano

Directions

    Remove stems from mushrooms.

    Save stems for other use.

    Wipe caps with paper towel.

    Put into jar.

    Combine remaining ingredients in saucepan.

    Heat just to boiling point.

    Pour over mushrooms, cool.

    Cover and refrigerate at least 2 days.

    Shake twice a day.

    When serving, drain and serve with toothpicks.
