Marinated Zucchini & Mint

Ingredients

  • 1 tablespoon olive oil
  • 4 medium zucchini, cut in half and quartered lengthways
  • 1 cup mint leaf
  • 1 garlic clove, finely sliced
  • 1 tablespoon red wine vinegar

Directions

    Heat olive oil in pan.

    Saute zucchini 4-5 minutes until lightly browned.
  3. 3
    Transfer to bowl and add half of the mint, garlic and red wine vinegar. Season to taste and stand 5 minutes.

    Just before serving, stir through remaining mint.
