Marshmallowed Sweet Potatoes

- 2 (16 oz.) cans sweet potatoes, drained and sliced
- 4 apples, peeled and sliced or 1 can sliced apples
- 3 Tbsp. margarine
- 1/2 tsp. cinnamon, more or less to taste
- 1 bag large marshmallows
Directions

1Place half of sweet potatoes in bottom of an 8 x 8-inch casserole.

2Dot with half of the margarine and sprinkle with half of the cinnamon.

3Layer with half of the apples.

4Repeat with remaining ingredients.

5Top with marshmallows.

6Bake at 350° for about 30 minutes, until marshmallows are golden.

7Be careful, they scorch easily!

8This recipe doubles well, can be prepared a day ahead if canned apples are used.

9(Great if you're in a hurry.)

10Is great with ham, turkey or roast beef.
