  • 1 (9-inch) crust, baked and cooled
  • 2 c. or more leftover mashed potatoes
  • 1/4 c. finely chopped onion
  • 3 Tbsp. chopped, fresh parsley or 1 Tbsp. dry
  • 1 Tbsp. lemon juice
  • 1/2 tsp. paprika
  • 2 c. grated orange Cheddar cheese (not low-fat)
  • 1/2 lb. bacon, cooked crisp and crumbled

Directions

    Mix potatoes, onion, parsley, lemon juice and paprika.
