- 4 medium baking potatoes, peeled and quartered
- 1 egg
- 4 tablespoons butter, divided
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon salt
- 1 teaspoon dried minced onion
- 1 teaspoon minced fresh parsley
- 1/8 teaspoon pepper
Directions

1Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain.

2In a large bowl, mash the potatoes. Beat in the egg, 2 tablespoons butter, cheese, salt, onion, parsley and pepper.
