Mashed Potatoes With Chives

  • 20oz cauliflower florets
  • 9 small Yukon Gold potatoes, peeled cut into 1-inch chunks
  • 6 medium garlic cloves, peeled
  • 3/4 cup low fat milk
  • 3 TBLS chives, fresh, sniped
  • salt to taste
  • tsp pepper or to taste

Directions

    Pace cauliflwoer, potatoes, garlic and 1/2 tsp of salt in a medium saucepan. Add enough water to cover ingredients and bring to a boil. Boil until vegetables are tender, about 10-15 minutes; drain and return to saucepan. Stir in milk, butter, remaining 1/2 tsp of salt and pepper; mash with a potato masher until smooth. Stir in chives and serve.
