- 1/2 lb. lean ground beef
- 1/2 c. sliced celery
- 1 tsp. butter or margarine
- 1 tsp. lemon juice
- 1 c. cooked rice
- 1/3 c. mayonnaise
- 1/3 c. onion, sliced
- 1/3 c. pepper, sliced
- 1/2 small clove garlic, minced
- 1/2 tsp. salt
- dash of Tabasco sauce
- 1 medium tomato, cut in wedges
- 1/2 c. corn chips, crushed
Directions

1Saute meat, onion, green pepper, celery and garlic in butter until tender-crisp. Add salt, pepper sauce, lemon juice, rice and tomatoes. Heat thoroughly. Stir in mayonnaise. Serve topped with corn chips. Makes 2 servings.
