  • 1 slice bread
  • 2 Tbsp. milk
  • 1 lb. ground beef
  • 1/2 lb. ground pork
  • 1/2 lb. ground veal
  • 2 eggs, beaten
  • 8 fresh parsley sprigs
  • 12 chive leaves, chopped fine
  • 1 lemon rind, grated
  • 2 Tbsp. butter
  • 6 Tbsp. grated Parmesan cheese
  • 6 Tbsp. grated Romano cheese
  • 1/2 tsp. salt
  • fresh ground pepper
  • 1 oz. salt pork, sliced
  • 1/4 c. olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, chopped

Directions

    Soak bread in milk, squeeze and shred.

    Add to bread: the meat, eggs, parsley, chives, lemon rind, butter, half of both cheeses, salt and pepper.

    Mix very well.

    Make balls about 1 1/2-inches in diameter.

    Combine salt pork and olive oil in skillet, heat and add onions and garlic.

    Cook until brown.

    Add meat balls and brown.

    Cover and simmer for 45 minutes.

    Add balls to sauce and continue cooking for 1 hour.

    Sprinkle with remaining cheeses.

    Serve over angel hair pasta.
