Meatless Stuffed Zucchini

Ingredients
- 2 lb. fresh zucchini squash
- 2 c. soft bread crumbs
- 3/4 c. shredded Cheddar cheese
- 1 egg, beaten
- 1/4 c. grated onion
- 1/4 c. minced parsley
- 1 c. spaghetti sauce, tomatoes or gravy
- salt and pepper to taste
Directions

1Clean zucchini; peel lightly and cut off stems.

2Cut in 3-inch lengths.

3Run apple corer through center of the zucchini lengthwise and pull out the center.

4Chop the centers very fine and add bread crumbs, then cheese, egg, onion, parsley, salt and pepper.

5Mix well and pack in hollow zucchini.

6Roll any remaining stuffing into small balls.

7Place balls and zucchini in baking dish and pour spaghetti sauce over all; cover.

8Bake at 400° for 1 hour.

9Uncover and bake 1/2 hour longer.
