  • 12 lb pasta
  • 1 12 cups bick's dill pickles, Garlic, chopped
  • 1 red pepper, julienne strips
  • 1 green pepper, julienne strips
  • 12 cup feta cheese, crumbled
  • 12 cup mozzarella cheese, cubed
  • 12 cup parsley or 12 cup cilantro, coarsely chopped
  • 12 cup green onion, chopped
  • 13 cup olive oil
  • 13 cup pickle juice (from the pickle bottle)
  • 1 large garlic clove, minced
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 14 teaspoon dried oregano

Directions

    Cook pasta until al dente; rinse and drain well.

    Transfer to a large salad bowl and mix with remaining salad ingredients; toss lightly.

    VINAIGRETTE: Combine all ingredients; mix well.

    Pour over salad and toss.

    Taste and adjust seasonings, if necessary.

    Cover and chill at least 2 hours up to 24 hours until serving.
