  • 2 Tablespoons Olive Oil
  • 2 Tablespoons White Wine Vinegar
  • 1 Tablespoon Minced Garlic
  • 1 teaspoon Dry Basil, Crushed
  • 1 teaspoon Dry Rosemary, Crushed
  • 1 teaspoon Sugar
  • 1/4 teaspoons Black Pepper
  • 1/4 teaspoons Salt
  • 15 whole Kalamata Olives, Pitted And Chopped
  • 1/4 cups Red Onion, Finely Chopped
  • 1/2 cups Cucumber, Peeled And Chopped
  • 2 cups Roma Tomatoes, Chopped, Remove Seeds
  • 13 cups Crumbled Feta Cheese

    Combine first 8 ingredients.

    Then add olives, onion and cucumber.

    Toss to coat and then refrigerate.

    Just before serving, gently stir in tomatoes and feta.

    Put the salsa over grilled chicken as a main dish or serve with baked pita chips as an appetizer.
