  • 1 bunch cilantro
  • 2 medium green peppers
  • 2 medium red peppers
  • 4 medium Spanish onions
  • 3 heads garlic, peeled

    Rinse cilantro.

    Roughly chop the green peppers, red peppers and Spanish onions.

    In your food processor or blender, mince all your ingredients in batches.

    Mix the sofrito.

    You can store in glass jars in your refrigerator or freeze it in ice cube trays.

    When the sofrito is frozen, transfer it to ziploc freezer bags.

    Use a tablespoon at a time or to taste in sauces, meats, beans and more to enhance the flavor of your food.
