- 2 egg whites
- 2/3 c. sugar
- 1/2 Tbsp. lemon juice
Directions

1Add lemon juice to egg whites.

2Beat until it holds very stiff peaks.

3Add sugar gradually, beating after each addition (1 tablespoon at a time).

4Beat until very glossy and stiff.

5Draw a 9-inch circle on brown paper.

6Place paper on cookie sheet. Spread meringue over circle to a depth of 1/4-inch.

7With remaining meringue form a wall around edge about 1-inch high. Bake in preheated very slow oven at 275° until meringue is lightly brown, about 1 hour.

8Cool thoroughly and add favorite filling.
