  • 3 egg whites
  • 1/4 tsp. cream of tartar
  • 1/4 tsp. vanilla
  • 2/3 c. sugar

    For a single large shell, lightly oil a 9-inch pie pan.

    For small individual meringues, place unglazed brown paper on cookie sheet.

    Beat egg whites and cream of tartar until foamy.

    Beat until peaks form. Gradually add sugar and vanilla.

    Beat 1 minute more.

    Spread the meringue in pie pan, building up the sides to be thicker than the bottom or shape into 12 x 4-inch diameter shells, making impressions in the middle with back of spoon. Bake at 275° for 1 hour and 15 minutes (until dry and light creamy color). Let cool. Remove carefully. Meringues may be stored in an airtight container until ready to fill.

    Fill with lite cherry pie filling or diet instant pudding and sliced banana.
