- 2/3 c. dried lentils
- 4 c. water
- 2 tsp. salt
- 1 clove garlic, minced
- 1/3 c. vegetable oil
- 1/3 c. chopped red onion
- 1 tsp. dried onion flakes
- 1/2 c. water
- 1 tsp. crushed red pepper
Directions

1Place lentils, water, salt and garlic in a 3-quart casserole. Bring to a brisk boil; cover and lower heat.

2Simmer about 1 hour. While lentils are cooking, heat oil in a frypan.

3Saute onion until tender, about 5 minutes.

4Add onion flakes, water and red pepper; simmer, uncovered, 5 minutes.

5When lentils are done, drain and add to onion mixture.

6Stir.

7Cook 15 minutes.

8Makes 4 to 6 servings.
