  • 5 eggs, beaten
  • 2 Tbsp. butter
  • 1/4 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1 (8 oz.) carton cream-style cottage cheese
  • 2 c. shredded Monterey Jack cheese
  • 1 (4 oz.) can chopped green chillies, drained

Directions

    Combine first four ingredients in a mixing bowl; beat well at medium with electric beaters.

    Stir remaining ingredients and pour into a well-greased 9-inch quiche pan.

    Bake at 400° for 10 minutes; reduce to 350° and bake about 20 minutes or until set. Cut into wedges to serve.
