  • 2 lb. ground chuck
  • 1 can Ro-Tel tomatoes
  • 1 can New Orleans style kidney beans
  • 1 pkg. Mexican rice
  • 1 lb. Velveeta cheese
  • regular Fritos, crumbled

Directions

    Cook rice according to package directions.

    Saute ground chuck; add Ro-Tel tomatoes and kidney beans and simmer.

    Mix rice into meat mixture.

    Grate cheese into mixture.

    Pour into 9 x 13-inch dish.

    Top with Fritos.

    Bake at 350° about 20 minutes.
