- 4 chicken breast halves, cubed
- 1 Tbsp. olive oil
- 2 zucchini, sliced
- 1 (14 1/2 oz.) can Mexican style stewed tomatoes
- 1 (8 oz.) can tomato sauce
- 1 (4 oz.) can diced green chiles
- 1/2 tsp. cumin
- 1 tsp. garlic powder
Directions

1Brown chicken in oil in a large skillet for 8 to 10 minutes. Wipe up excess oil with paper towel.

2Combine cumin and garlic with tomato sauce and pour over chicken, then add remaining ingredients. Cook and simmer, covered, 8 to 10 minutes.

3Uncover and cook on high 8 to 10 minutes.

4Serve over cooked rice.
