- 2 lb. block Velveeta cheese, cubed
- 1 large bag nacho cheese Doritos, crushed
- 6 chicken thighs
- 1/2 onion, chopped
- 1/2 bell pepper, chopped
- 1 can Ro-Tel, diced
- 1 can cream of chicken soup
- 1 pkg. taco seasoning
Directions

1Boil chicken thighs until tender.

2Cool and debone; save 1/2 cup of chicken broth and set aside.

3In 13 x 9-inch pan, layer Doritos, chicken, onion, bell pepper and Velveeta cheese.

4Repeat layers once or twice more.

5In a saucepan, mix Ro-Tel, cream of chicken soup, 1/2 package of taco seasoning and 1/2 cup of chicken broth.

6Mix well and pour over top of layers.

7Use fork to make sure mixture goes through the layers.

8(Poke with fork.)

9Bake at 350° for 20 to 35 minutes or until cheese is melted.
