- 1 c. yellow corn meal
- 1/3 c. all-purpose flour
- 2 Tbsp. sugar
- 1 tsp. salt
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 eggs, beaten
- 1 c. buttermilk
- 1/2 c. vegetable oil
- 1 can creamed corn
- 1/3 c. chopped onion
- 2 Tbsp. green pepper, chopped
- 1/2 c. Cheddar cheese, shredded
Directions

1In a medium bowl, combine first 6 ingredients.

2Combine remaining ingredients.

3Add to dry ingredients and stir until moistened.

4Pour in a 10-inch pan or an iron skillet that has been greased.

5Bake at 350° for 30 to 35 minutes or until golden brown. Makes 8 to 10 servings.
