- 4 whole Large Russet Potatoes
- 2 Tablespoons Butter
- 2 Tablespoons Flour
- 1- 1/4 cup Milk
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Pepper, Or To Taste
- 1 teaspoon Dry Mustard
- 1/2 teaspoons Dried Tarragon
- 8 ounces, weight Cheese, Cheddar Or Your Preference
- 16 ounces, weight Salmon, Cooked And Chunked
- 16 ounces, weight Peas, Frozen Or Fresh

1Preheat oven to 350 degrees F.

2The first thing I do is make the mashed potatoes.

3It really doesnt matter how you make them; use whatever tried-and-true recipe for mashers you already know.

4You can even use instant, if you roll that way.

5The one change I make is that I peel my potatoes for this one.

6Make your cheese sauce.

7Melt the butter in a saucepan and whisk the flour into it.

8Cook on medium heat until its creamy and bubbling, about a minute.

9Pour the milk in slowly and whisk constantly until it just comes to a boil.

10It will thicken as it cooks, so dont worry if it seems runny at the start.

11Whisk in the salt, pepper, mustard, and tarragon.

12Add the cheese by handfuls and whisk in until completely melted.

13I usually use cheddar, but almost any sort of shredded cheese would work great: sharp, white, jack, etc.

14Next, take a 2.5L (or close) baking dish and crumble the cooked salmon into it.

15It doesnt matter how its cooked because its just going to be crumbled and mixed with other stuff, so do whats easiest.

16Canned salmon works just fine and Ive even used smoked salmon and it tasted great!

17Add the veggies in with the salmon.

18I like to use peas because theyre pretty neutral, but there are many veggie alternatives that would taste great here.

19Add the cheese sauce and mix thoroughly.

20Finally, add the mashed potato to the top of the mixture and smooth evenly.

21Bake for about 20-25 minutes, until the edges start getting a golden tinge.

22Let it rest for a few minutes after removing from the oven.
