  • 2 medium jalapeno peppers, seeded and chopped
  • 1 box Jiffy corn muffin mix
  • 1 1/2 c. shredded Cheddar cheese
  • 1 large onion, chopped
  • 3 eggs, slightly beaten
  • 2 1/2 c. milk
  • 1 1/2 c. self-rising corn meal
  • 1 (8 oz.) can creamed corn
  • 1/2 c. vegetable oil

Directions

    Combine ingredients in a large bowl.

    Pour into greased 9 x 13-inch pan and bake at 400° for 40 minutes or until done.
