Mexican Corn Bread

Ingredients

  • 1 c. yellow corn meal
  • 2 eggs, well beaten
  • 1 c. sweet milk
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 1 lb. (#303) can cream-style corn (yellow)
  • 1/2 to 1 lb. ground meat
  • 1/4 c. bacon drippings
  • 1/2 lb. Cheddar cheese
  • 2 to 4 jalapeno peppers (usually 2)
  • 1 onion

Directions

    Mix corn meal, eggs, milk, soda, salt, corn and bacon drippings.

    Set aside.

    Saute ground meat and drain.

    Separately prepare 1 large onion, cheese and jalapenos and mix together. Pour into greased skillet (heated) with a fine layer of corn meal sprinkled and browned.

    Bake for 45 to 50 minutes in 350° oven or until springs back.
