- 1 c. yellow corn meal
- 1/3 c. all-purpose flour
- 2 Tbsp. sugar
- 1 tsp. salt
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 eggs, beaten
- 1 c. buttermilk
- 1/2 c. vegetable oil
- 1 (8 3/4 oz.) can cream-style corn
- 1/3 c. chopped onion
- 2 Tbsp. green pepper, chopped
- 1/2 c. shredded Cheddar cheese
Directions

1In mixing bowl, combine first 6 ingredients.

2Combine remaining ingredients; add the dry ingredients and stir only until moistened. Pour into greased 9-inch square pan or 10-inch skillet.

3Bake at 350° for 30 to 35 minutes or until brown.
